Mother’s day Raspberry & dark chocolate teacakes Ingredients:

- 200g dark chocolate, finely chopped
- freeze-dried raspberry pieces, to decorate (optional)
- 100g butter, softened
- 75g icing sugar
- 1 medium egg yolk
- 1 tsp vanilla extract
- 2 tbsp milk
- 175g plain flour
- 4 tbsp cocoa powder
Method
- First, make the chocolate biscuit bases. Put the butter and icing sugar in a large bowl, mash together with a wooden spoon then beat for 1-2 mins or 2 until smooth. Add the egg yolk, vanilla, milk, flour, cocoa and a pinch of salt, and mix again. Tip onto your work surface and knead briefly until evenly coloured. Wrap in cling film, pat into a disc and chill for 20 mins.
- Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Dust the surface with a little flour, unwrap the dough and roll to the thickness of a £1 coin. Use a 5cm cookie cutter to stamp out as many discs as you can, then re-roll the trimmings to cut out more – you should get about 35 in total. Place on the baking sheets and bake for 10-12 mins, swapping the trays over halfway through. Cool on a wire rack.
- Next, make the marshmallow filling. Put the gelatine in a bowl of cold water and set aside to soften. Put the egg whites, sugar, 1 tbsp water and a good pinch of salt in a heatproof bowl. Place over a pan of gently simmering water, making sure the bowl doesn’t touch the water, and whisk until thick and leaving a prominent trail from the beaters – this will take about 5 mins. When the meringue is thick, remove the bowl from the heat and continue whisking while you add the gelatine leaves, one at a time. Keep whisking for another 3-5 mins until the meringue has cooled slightly and is really stiff. Transfer to a piping bag fitted with a large round nozzle (mine was 1.5cm).
- Flip each biscuit over so the bottom is facing upwards. Spoon 1/2 tsp jam onto the middle of each biscuit. Holding the piping bag above the jam, pipe a blob of meringue to fill the surface of the biscuit, quickly pulling away to make a spike. Leave to set for 30 mins.
- Melt the chocolate in the microwave, stirring every 20 secs or so to ensure it doesn’t burn. To cover the teacakes in chocolate, hold each one above the bowl at an angle and drizzle over the chocolate, letting it run back into the bowl, turning the teacake until completely covered. Place on a wire rack suspended over a baking tray. After every 5-10 teacakes, sprinkle over a little freeze-dried raspberry, if using. Will keep for 3 days in a sealed container.

Marvel Cinematic Universe has lots in Store for the Future.
I’m a huge fan of the MCU. I even enjoyed Iron Man 2. So I am ridiculously excited for Avengers: Age of Ultron, which comes out May 1st and all of the other movies promised for the next few years. As I can’t yet review the movie itself, I decided to sit down and do a review of the trailer. Here’s the basic rundown of what we see in the trailer: punching, smashing, running, screaming, flying, all the basic superhero stuff. While it definitely got me excited for the movie, there was a lot going on in the trailer and it was very difficult to process. It also seemed that all of the destruction and chaos was all Tony Stark’s (Iron Man’s) fault, and I’m not too surprised about that. The movie has all of the familiar faces fans know from the Avengers (the exception being Spiderman, because they always leave out Spiderman), and a few new faces that have yet to be introduced. I personally am extremely excited for the film, and cannot wait for the premier.

Death Incarnate chapter 5: More Questions
Jayden sighed heavily as he walked through the gold lit streets of the setting sun, brushing a lock of now black hair out of his eyes. So much had changed in the last 24 hours it was almost like a dream rather than reality. The fact that the Grim Reaper had fused with the teen hadn't really helped to calm his nerves, even if it did look like he was just blowing this whole thing off as if it happened everyday. Jayden knew however, that this was something that did not happen everyday, and now as he looked in the mirror of his bathroom he knew, that he had to think of a way to explain to his family, why his hair was now black, and his eyes were now permanently red. This'll be fun... He thought sarcastically as he made his way downstairs. You say It that like it's a bad thing. A voice laced with amusement chimed from within Jayden's head making the teen jump a foot in the air, before looking around for the source of the voice. When nothing happened, Jayden just saw it as exhaustion and hallucination before he slipped into the TV room, before plopping down on the familiar chair and turned the TV on, just as his brother Danny came running down the stairs into the kitchen. “Danny! What've I said about running in the house with socks on”!? Jayden called to his brother not, taking his eyes off the TV. The sound of his brother's voice filtered into the room from the kitchen. “Sorry Jay”! He called.
Jayden sighed and rolled his eyes while smiling slightly at his younger brother's antics before returning his attention to the TV. He arched an eyebrow at the sight of the cartoon before shaking his head and taking out his phone and dialling a number. He waited a few minutes for the tone to finish before a voice answered on the other side. “Hello?” A familiar voice answered on the side of the line making the teen smile. “Hey man it's me. Long time no see huh?” Jayden responded getting him and the other line to chuckle lightly. “Good to hear from you bro. I was starting to think, you'd forgotten li'l ol' me”. The caller said making Jayden smile even though he/she couldn't see it, since there was no screen for them. “So what's up? It's not every day that I get a call you unless it's something really important.” Jayden sighed heavily and rubbed his forehead. “What do you know about the Grim Reaper”? Jayden asked. The caller on the other end hummed thoughtfully before answering. “The Grim Reaper huh? Hmm...Well I know, that he's basically the incarnation of death itself really, ruler of the underworld, taker of souls, and the leader of the reaper council, and a whole bunch of other tittles that I'm not gonna bother with...But yeah, that's about all I know.” The caller said making Jayden said. “Well thanks anyway, though this just left me with more questions than answers...But thanks.” Jayden said and with that he hung up the phone.
